In this pie, quince gets a truly royal taste. Honestly, I don't like quince. I remember cooking beef with it a few years ago and I didn't like its taste so much that I vowed to buy it again. But a couple of months ago I saw beautiful yellow fruits and couldn't resist. And I didn't regret it. In this pie, the taste of quince was revealed simply luxuriously.

I have a silicone mold, so I didn't lubricate it with anything. If you have an ordinary metal mold, it is better to cover it with parchment.
