Sponge Cake with Caramelized Quince

In this cake, quince takes on a truly royal flavor. Honestly, I don't care for quince. I remember cooking beef with it a few years ago and disliking the taste so much that I swore I'd never buy it again. But a couple of months ago I spotted some gorgeous yellow fruit and couldn't resist—and I have no regrets. In this cake, the flavor of quince comes through beautifully.

Cooking method

    Cut the quince into small slices.

    Melt the butter in a skillet, then add the sugar and quince. Cook, stirring, until the sugar caramelizes.

    Combine the eggs with the sugar and vanilla sugar.

    Beat until the mixture lightens in color and grows in volume.

    Sift the flour and add it to the batter in stages. Go by the consistency of the batter—keep in mind you may need a bit more or less flour than the recipe calls for.

    Bake the cake in an oven preheated to 350°F (180°C) for about 30 minutes.

    Carefully invert the finished cake so the fruit is on top, then cut it into pieces.

  • My pan is silicone, so I didn't grease it with anything. If you're using a regular metal pan, it's best to line it with parchment.
  • Be ready for the amount of flour to run a little more or less than the recipe states. Go by the desired batter consistency rather than the exact quantity. To avoid mistakes, read up on flour and its properties!
