Fried Rabbit with Potatoes and Herbs
Rabbit is a lean, wholesome meat, and this dish is both nourishing and satisfying. It's a great fit for a holiday table or any special occasion. Serve it with any vegetable salad, or alongside pickled or brined vegetables and zesty condiments.

Step 1:
Gather all the ingredients ahead of time.

Rinse the rabbit well and cut it into large pieces. It's best to use the hind legs and other meatier cuts.

Put all the meat in a pot, cover with water, salt to taste, and simmer until the meat is cooked through.

Peel and finely mince a few cloves of garlic.

Rinse the dill, pat it dry on a paper towel, and finely chop it with a knife.

In a deep bowl, mix the garlic and dill together thoroughly, pressing the mixture lightly with a spoon to release the aromas.

Parboil the potatoes in salted water, then fry them in vegetable oil until golden and crisp.

Once the rabbit is tender, lightly fry each piece in a little vegetable oil on both sides.

Arrange the hot meat and potatoes on a platter and sprinkle with the dill-and-garlic mixture. Add some thinly sliced onion if you like. Enjoy!
