Partridge Baked with Oranges

    1. Rinse the partridges, split them in half, and pat dry with a paper towel. 2. Heat a sauté pan well, add the vegetable oil, and brown the partridge halves for 10 minutes per side. Start them breast-side down—you can cover them and press down with a lid or weight—then flip and brown the backs. 3. Peel the oranges and cut into segments, then add them to the pan along with the seedless grapes, and sprinkle with grated orange zest. Season with salt and pepper to taste. 4. Cover the pan and transfer to a preheated oven for 10 minutes. Move the finished partridges to a platter and scatter with fresh chopped herbs.
