    1. Grind the meat and mix in the finely chopped onion. Season the filling with salt and pepper. If the mixture is very thick, work in a couple of spoonfuls of cold water. 2. Lightly oil your work surface. Divide the dough into pieces and roll each into a round. Place some filling in the center and spread it out a little, keeping clear of the edges. Pinch the dough closed, leaving a small opening in the middle. 3. Pour a generous amount of vegetable oil into a heavy-bottomed skillet, heat it well, then lower the heat so the filling has time to cook through. Lay each belyash in the pan opening-side down; once browned, flip to the other side (a fork makes this easy). Lift the finished belyashi out with a slotted spoon and let them drain on a paper towel. Your sourdough belyashi are ready—enjoy!
