Sauerkraut Kulebyaka (Russian Sourdough Pie)

    1. Finely chop the onion and sauté it briefly in a skillet with a little vegetable oil. Squeeze the sauerkraut dry, add it to the pan, and continue cooking with the onion. Let the filling cool. 2. Roll out one portion of the dough, keeping the edges thinner than the center. Transfer it to a greased baking sheet. Spoon the filling into the middle and spread it out. Cover with the second portion of dough. 3. Brush the pie with beaten egg and bake at 350°F (180°C) for about 40 minutes, until the crust is golden.
