Chudu (Caucasian stuffed flatbread) with kefir dough
Make these tasty stuffed flatbreads—so good! Chudu is a Caucasian dish. My family loves them, and I especially like making them for road trips—handy, filling, and delicious. They're quick and easy, too. Kefir dough turns out softer and more tender than dough made with water. Give it a try!

- Pour the kefir into a deep bowl.
- Sift in two-thirds of the flour and add the baking soda and salt. Stir, then pour the mixture into the kefir.
- Stir again, then turn the sticky mass out onto the counter. Knead the dough until it no longer sticks to your hands, adding the rest of the flour a little at a time. Don't make the dough too stiff.
- Wrap the dough in plastic wrap and let it rest for half an hour.
- While the dough rests, make the filling by mixing the mashed potatoes with the brynza. Taste and add salt if needed.
- Divide the dough into 12 pieces, shape each into a ball, and roll them out thinly into circles.
- Put filling on one half of each circle, fold the other half over, and seal the edges. Trim off any excess dough neatly.
- Cook the chudu in a dry skillet (no oil) on both sides until golden.
- Brush the finished flatbreads with butter and serve hot with sour cream.
