Chudu (Caucasian stuffed flatbread) with kefir dough

Make these tasty stuffed flatbreads—so good! Chudu is a Caucasian dish. My family loves them, and I especially like making them for road trips—handy, filling, and delicious. They're quick and easy, too. Kefir dough turns out softer and more tender than dough made with water. Give it a try!

    1. Pour the kefir into a deep bowl.
    1. Sift in two-thirds of the flour and add the baking soda and salt. Stir, then pour the mixture into the kefir.
    1. Stir again, then turn the sticky mass out onto the counter. Knead the dough until it no longer sticks to your hands, adding the rest of the flour a little at a time. Don't make the dough too stiff.
    1. Wrap the dough in plastic wrap and let it rest for half an hour.
    1. While the dough rests, make the filling by mixing the mashed potatoes with the brynza. Taste and add salt if needed.
    1. Divide the dough into 12 pieces, shape each into a ball, and roll them out thinly into circles.
    1. Put filling on one half of each circle, fold the other half over, and seal the edges. Trim off any excess dough neatly.
    1. Cook the chudu in a dry skillet (no oil) on both sides until golden.
    1. Brush the finished flatbreads with butter and serve hot with sour cream.
