  • Adding carrots to a familiar dish—liver fried in sour cream—only makes it better. The carrot brings a note of sweetness and juiciness. Liver has a fairly dense, tender texture, which is why it's usually cooked in sauces and gravies; when you simply pan-fry it, it helps to cut the pieces small and add some vegetables. To make liver with carrots and onions, all you need is those ingredients plus salt and oil for frying. The method is basically the same as in the "chicken liver with carrots and onions in sour cream" recipe: - Prep the liver: rinse it, trim out the ducts, and cut it into large pieces. - Heat the oil in a skillet and lightly fry the onion, then add the julienned carrot and cook until soft. - Add the liver to the vegetables and sear on both sides. - Stir in the sour cream, cover, and simmer until fully cooked, about 5–6 minutes. Serve it with or without a side, and add fresh herbs if you like.
