- Heat the oil in a skillet. 2. Crack the eggs into the pan. If you prefer an omelet, first crack the eggs into a bowl, whisk them lightly with salt, then pour them into the skillet. 3. Scatter the frozen vegetables in an even layer over the eggs (or omelet). Salt to taste if you like. 4. Cover the skillet and cook for 5–7 minutes over medium heat. It's great served on fresh bread or alongside a light salad. Enjoy!
