Pork with lingonberry sauce with red currant

Cooking method
Preheat the oven to 180 degrees. Pork is washed, wiped with paper towels. In a bowl, mix jams, honey, lemon. We take a loin and a sharp knife and cut the surface of the meat diagonally (depth 3-4 mm) - rhombuses are obtained on the surface.
Salt the meat, and then grease with sauce. Next , we insert a carnation bud into each diamond . We put the pork in a baking dish and send it to the oven for 50-60 minutes.
While the pork is cooking, we make the sauce. Put the lingonberries and 120 ml of water in a saucepan, add sugar and cook over medium heat for 5-7 minutes. During this time, we dilute 1 tablespoon of starch in 40 ml (I have corn). When the time has passed, turn off the fire, pour in a thin trickle of starch mixture with constant stirring and immediately remove from the heat. The sauce can be "punched" in a blender - I didn't do that, I like that there are whole cranberries in it.
Pull out of the oven, wait for 5 minutes, then you can cut into portions and serve with lingonberry sauce and your favorite side dish.
