Step-by-step cooking
Step 1:
Heat 3 tablespoons of vegetable oil in a saucepan or deep frying pan. Peel the onion, cut into half rings and lightly fry.
Step 2:
Peel the garlic and finely chop 2 cloves.
Step 3:
Add garlic to onion, fry until light golden brown.
Step 4:
Chicken fillet cut into large pieces across the fibers. If you use chicken, divide the hams into thighs and shins, cut off the extreme parts of the wings. Cut out the breast and cut it with a bone, or you can cut out the fillet. I usually use the ridge to make broths for first courses. You can take 1/2 chicken carcass and chop it into pieces of a convenient size.
Step 5:
Put the chicken pieces in a saucepan and mix with onion and garlic. Fry until lightly golden.
Step 6:
Cut carrots and bell peppers.
Step 7:
In another frying pan, heat 2 tablespoons of vegetable oil and fry the carrots and pepper.
Step 8:
Cut the rings of bitter pepper.
Step 9:
Pour tomato juice to carrots and pepper and put rings of bitter pepper. Mix everything and simmer. I use canned ground tomatoes (harvested for the winter). You can use tomato paste diluted with water, tomato juice, fresh tomatoes ground with a blender for the sauce.
Step 10:
Prepare the sauce until the liquid evaporates, when oil remains at the bottom of the pan.
Step 11:
During this time, the chicken will have time to brown slightly.
Step 12:
Put the tomato sauce in a saucepan with chicken, add 1/2 cup of water. Salt, pepper, sprinkle with spices. Close the lid and simmer until the chicken is ready. If we cook from fillets, then 20 minutes is enough.
Step 13:
We cut the greens.
Step 14:
When the chicken is ready, add 0.5 tsp sugar and 1 tsp vinegar. Squeeze 3 cloves of garlic through the press, mix.
Step 15:
Sprinkle with herbs. Close the lid, let it simmer for a couple more minutes. The dish is ready. The side dish can be any: pasta, rice, mashed potatoes, porridge.
