Souvlaki with Figs
An original Greek dish worth trying. Souvlaki are Greek-style kebabs; unlike the Caucasian kind, they're grilled on short skewers rather than long ones. If you're using wooden skewers, remember to soak them in cold water for about 30 minutes ahead of time. Soaking keeps them from burning, and it also stops the food from sticking to them. Easy, quick, and simple, as always.
Cooking method

Step 1:
Using a small sharp knife, cut the stem tops off the figs. Scoop out a little of the flesh from the center.

Cut the feta into 18 equal cubes and tuck one cube into each fig. Use the mildest, least-salty feta you can find for this dish; if that's not an option, swap in a soft, mild cheese.

Cut the bacon strips in half. Lay a sage leaf on each piece and set a stuffed fig on top.

Step 4:
Wrap each fig in bacon and thread them onto the soaked wooden skewers. Heat the olive oil in a skillet and fry the souvlaki about 2 minutes per side. Serve as a warm appetizer alongside a dry white or red wine.
