Make pancake batter from eggs, milk, baking powder, salt and sugar.
Heat a pancake pan, grease with oil (blot the excess with a napkin).
Pour a ladle of dough into a frying pan and distribute evenly. Wait a few seconds when the pancake "grabs", and break an egg into the middle of the pancake. Then, using a spatula, smear the protein all over the pancake, while the yolk should remain in the center of the pancake, unharmed.
Spread ham slices around the yolk and sprinkle the pancake with grated cheese (try not to touch the yolk). Leave the pancake like this for a few seconds, and then use a spatula to wrap the edges from the fourth side. To prevent them from unfolding, you need to hold the spatula on the fold a little longer.
Grease the edges of the pancake with butter - and serve immediately! During this time, the yolk should not "grab" until the end, and its contents will be an excellent sauce for the filling.
Tip: experiment with the fillings of these pancakes - they can be very diverse: spinach, mushrooms, Bolognese sauce, bacon, olives, tomatoes... Here, as with pizza: everything that is in the refrigerator will come in handy.
