- In my opinion, kids' recipes shouldn't just be tasty and healthy — they should also catch a child's interest. Moms have to come up with all sorts of tricks every day to feed their little picky eaters. A salad of ordinary white cabbage, but served inside a cucumber and shaped like a boat, will definitely get eaten. Plus, a dish like this can dress up a holiday table just fine. Another secret of this salad: the cabbage isn't shredded but grated on a coarse grater. Trust me — the taste is completely different, and much milder than shredded cabbage. Dress the cabbage with mayonnaise and let's get to our "boats." Cut a large cucumber in half and scoop out the middle, leaving a rim all around. Cut the second cucumber lengthwise into thin slices — these are our future sails. Now assemble the boat: fill the cucumber with a mound of cabbage. Thread a long cucumber slice onto a toothpick or cocktail skewer and stick it into the cabbage salad. Arrange the boats nicely on plates. At this point I always think of the children's rhyme, "Here comes the boat, sailing right into your mouth!" I hope you and your child enjoy this "Little Boat" salad recipe.
