"Vitamin" Cabbage Salad with Carrot and Pepper
A delicious and extremely easy salad! Give it a try! Shall we talk about cabbage? People have said all sorts of things in response to "fancy" fare. Cabbage salad, they'd say, can't be real food — how can you fill up on a cabbage leaf? So cabbage salad was often dropped from the menus of many pretentious folks. And even now, most of us — used to a simple Olivier, herring "under a fur coat," and crab salad — have forgotten about such a wholesome dish as cabbage salad. Cooking method
- So, finely shred the fresh cabbage. Then lightly salt it. Right away, gently knead it with clean hands until it releases its juice. Grate the carrot on a coarse grater. Then cut the lemon in half and squeeze out a little juice. Add some olive oil. And to make it smell wonderful, sprinkle the dish with caraway. Don't like the sour-salty taste? No problem — add a little sugar to the salad. You can chop a sprig of dill or parsley and either scatter the herbs on top or mix them in. No caraway on hand? Never mind — you can add shelled toasted seeds. And don't forget the green onion — tasty and healthy. Remember that cabbage was praised for good reason. This vegetable improves the metabolism. It also has a beneficial effect on the nervous system. For liver troubles and gastritis, there's nothing better than cabbage juice. It's recommended on the menu for diabetics. A mix of sauerkraut brine and tomato juice was once used to treat serious ailments. Fresh cabbage leaves help sore joints and abscesses, as well as people with headaches and burns. And for a sore throat, gargling with cabbage juice and honey is the best remedy. Cabbage juice is even used in cosmetics.
