- Press the cottage cheese through a sieve to break up the curds finely. Stir in the softened butter, along with the egg and sour cream. Add the baking soda, salt, and sugar. A cup and a half of flour rounds out the dough ingredients. Add it and start kneading — no yeast needed here. Dust your work surface with the remaining flour. Turn the dough out onto the table and knead for more than five minutes, adding flour a little at a time. Done. Now make the lovely filling: rinse the sorrel under the tap and chop it. Put the chopped greens in a skillet with a little oil, set it over low heat, and sauté the sorrel. You'll see it gradually shrink down in volume — that's exactly what you want. Once it's ready, take it off the heat and start shaping the pies. Divide the dough into pieces and roll them out. Place about a teaspoon of filling on each round, then add a teaspoon of sugar to each. Instead of sugar you can use salt if you prefer — you'll need much less of it. Pinch the dough rounds firmly closed along the edges. Set a skillet over the heat and fry the pies over low heat, turning them as they brown. Stack the finished pies on a plate. These are best eaten at room temperature. Enjoy!
