  • Beat the eggs and add the kefir; mix everything together. Sift the flour with the baking soda into the kefir-egg mixture and knead the dough. It should be soft and not stick to your hands. Let the dough rest for half an hour. Grate the cheese, add the egg yolks, and mix well. Stir in any finely chopped fresh herbs. Divide the dough into four parts, then split each part into two unequal pieces. Roll each into a thin round. Spread a quarter of the cheese filling evenly over the larger round, leaving a small border around the edge. Lay the smaller round on top and pinch the edges to seal. Set the khachapuri seam-side down in an oiled skillet and cook, covered, over low heat for 6-8 minutes. Flip it over and fry, uncovered this time, for another 3-4 minutes.
