Grilled Sausages with Wine

This recipe will make you fall in love with homemade sausages for good! You'll need cleaned, prepped pork casings.

  • Trim the excess fat off the meat and cut it into manageable pieces, then grind it in a meat grinder. Add the salt, fennel, and the pepper blend to the ground meat and mix well. Pour in the wine and stir again. Fit the sausage-stuffing attachment onto the grinder, slide a casing over it, and start feeding the meat in, filling the casing evenly along its whole length. You decide how long to make each link — you can tie them off with butcher's twine. I made mine about 10 inches long. Now grill the sausages however you like — over a grill grate, on a barbecue, or over coals. Grilled sausages come out incredibly tasty!
