Cooking method
I tried this dish of Azerbaijani cuisine while visiting my good friends. In this Azerbaijani family, the national traditions of cooking are carefully preserved. The hostess of the house was happy to share with me a culinary recipe for frying in Azerbaijani.
Lamb flesh should be cut into pieces. One serving is 3-4 pieces of meat. Wash the lamb kidneys, peel off the films and cut in half. Season the kidneys and pieces of meat with salt, pepper and fry in oil. Onions need to be cut into rings, spasserovat and mixed with meat. Knead a steep unleavened dough on water, add salt. Then roll out the dough into small and very thin tortillas. Bake them in a frying pan without oil. Then the finished tortillas need to be rolled up in the form of a bag, put the ready-made roast there and tie it all with green onions.
As a side dish to this dish, you can fry tomato slices and decorate with herbs. Toasting in Azerbaijani can become an ornament of any festive feast.
