Peach Sponge Fritters
Wonderfully delicious little fritters made from sponge-cake batter! My mother-in-law gave me the idea for this one. They're delicious fritters made from a light sponge batter, with fruit as the star ingredient. I'm sharing the peach version here, but they turn out just as good with apple or pear. A heads-up: the amounts below make only four small fritters, which is honestly nowhere near enough to enjoy their one-of-a-kind flavor. Compared to other desserts, these peach sponge fritters taste like the classic apple charlotte cake — only much quicker and easier to make.
