  • If your weeknight dinners are feeling a little tired, try this wonderful Italian classic: meatballs with a crisp fennel and radicchio salad. It's real Italian home cooking, an appetizer that dresses up any table and impresses guests. Start with ice: pile the vegetables into a large bowl, tuck ice around them, and pour ice water over the top. The cold shock keeps them extra crisp and juicy. Put the bread in a separate bowl and pour the beef broth over it; let it soak for about 5 minutes. Squeeze out the bread and mix it with the ground beef, onion, and parsley. Crack in the egg, season with salt and pepper, then knead the mixture and roll it into meatballs. Set a large skillet over the heat, add the canola oil, and drop in the butter. Once the fat is hot, fry the meatballs over medium heat until they're browned on all sides, about 5 to 7 minutes. Transfer them to a plate lined with paper towels to drain. In a separate bowl, whisk the olive oil with the vinegar to make the dressing. Pull the vegetables out of the ice water and pat them dry — paper towels work well here. Chop the dry vegetables finely and toss them with the dressing, then season with salt and pepper. Thread the meatballs onto wooden skewers if you like and serve them alongside the salad. Enjoy!
