A French omelet is just the thing for a proper breakfast. I'm not one for fussy cooking first thing in the morning, so I'm always hunting down quick recipes — and this is one of my favorites: a hearty, satisfying, classic French omelet made right in the skillet.

  • Set a small skillet over the heat, add the butter, and while it melts, quickly crack three eggs into a bowl, beat them lightly until smooth, and season with salt and pepper. Pour the beaten eggs into the hot skillet with the melted butter and cook, stirring gently, for just a couple of minutes. You'll end up with a tender egg pancake that you can fold in half and slide onto a plate. To dress it up, scatter some fresh herbs over the top and add a few tomato wedges alongside. It's a wholesome, no-fuss breakfast for those mornings when you're short on time.
