Fried Stuffed Zucchini Rings with Smoked Sausage

A really simple, tasty dish — make it and everyone will love it! Zucchini is a vegetable you can turn into all sorts of good things, and this is one of the easiest ways to do it. Ground meat is the usual filling, but here we use sausage for speed (smoked chicken works too). These zucchini rings with sausage and cheese are great for breakfast instead of sandwiches, for lunch or dinner, and even packed along on a picnic. They're delicious hot or cold — so let's get cooking!

Cooking method

    Wash and peel the zucchini. Cut it into rings about 1/2 inch (1–1.5 cm) thick and scoop out the seedy center of each.

    Cut the sausage into small cubes.

    Wash the tomatoes, cut out the stem end, and slice them into rounds about 1/4 inch (0.5 cm) thick. Grate the hard cheese on the coarse side of a box grater.

    In a shallow bowl, whisk 2 eggs with salt and ground black pepper. Put flour in another dish. These are for dredging the zucchini.

    Make the filling: in another bowl, beat 3 eggs and add salt, pepper, sour cream, the diced sausage, and green onion. Mix well.

    Dip the zucchini rings first in the egg, then in the flour.

    Heat the vegetable oil well in a skillet, then lower the heat to medium. Lay in the zucchini rings, cover the pan with a lid, and fry them on both sides.

    Once the bottom side is browned, flip them over.

    Spoon the filling into the center of each ring, top with a slice of tomato, and add the grated cheese. Cover the pan and wait for the bottom of the zucchini to brown.

    Once the zucchini is fried and the cheese has melted, transfer them to a platter. Now just fry the remaining batch — to speed things up, I used 2 skillets on 2 burners.
