Fried Salmon with Potatoes
Potatoes and fish are a delicious combination — a healthy, nourishing dish! This fine salmon is very good for you, especially if you have thyroid issues. I love salmon because it's rich and has few bones, so I don't even worry about serving it to the kids. Here's my favorite way to cook this beautiful fish — fried salmon.

Cooking method
- Cut the salmon into finger-thick pieces. Before frying, make a quick marinade: squeeze the juice of one lemon, add salt and pepper — a little fish seasoning too, if you like, though that's a matter of taste — and rub it all over the pieces. Set them in a cool spot for half an hour so the salmon can soak it up a bit. In the meantime, cut the potatoes into strips, rinse them, and let them dry. Now back to the fish: blot it with a paper towel or cloth so it's dry, then drop it into very hot sunflower oil to deep-fry. When a golden crust forms, lift it out with a slotted spoon onto your serving dish and add a little salt on top. Do the same with the potatoes and pile them on top. You can garnish the fried salmon with fresh herbs and serve fresh vegetables or a cabbage salad alongside. Delicious and filling.
