- In Kyrgyz cooking, as in any Central Asian cuisine, meat dishes are everywhere — a legacy of this people's nomadic past. Here's my own version of this dish. Start by making the noodle dough: combine water, flour, and salt. Let the resulting unleavened dough rest for 2 hours, then knead it, roll it out into a sheet about 0.5 mm thick, and cut it into small squares or thin noodles. Boil the noodles in salted boiling water for about 5 minutes. I cook the noodles or sheets right before serving. For the sauce, I rinse the meat and cut it into strips. Fry the meat in vegetable oil until golden. Season with salt and pepper, add the onion sliced into half-rings and the tomato purée, and fry for another 5–10 minutes. Then add the radish, cut into matchsticks, and fry for 10 minutes more. Add the finely chopped garlic and herbs, pour in the broth, and simmer for 20–25 minutes until done. Your delicious, hearty lagman is ready! To serve, divide the noodles among deep bowls and ladle the meat sauce over them. Sprinkle with finely chopped parsley on top. I serve the vinegar on the side, since that particular seasoning is a matter of taste.
