Skillet Eggs with Onion, Tomato, and Sausage
Eggs with sausage make a great hearty breakfast! Plenty of people prefer a light morning meal, but there are times you need something more filling - before a long drive or a day of hard work. This skillet of eggs with tomatoes and onions is just the kind of rich, satisfying dish for that.

Cut the sausage into small pieces.

Cut the onion into half-moons.

Pour boiling water over the tomato, peel off the skin, and cut it into small pieces.

Heat a tablespoon of vegetable oil in a skillet and add the sausage and onion. Cook over medium heat, stirring occasionally, for about 5 minutes, until the sausage is browned.

Add the diced tomato and stir. Cook for another 3 to 5 minutes.
