Crepes with a Mushroom, Ham, and Cheese Topping Cooked In
Even a beginner cook can make these tasty crepes! This is one of our family's favorite crepe recipes - they're hearty and really delicious.
Cooking method

Step 1:
Make the batter: beat the eggs, add the salt, sugar, and warm milk, then add the flour and beat with a mixer.

Step 2:
Drain the mushrooms and cut them into cubes. Grate the cheese on the large holes of a grater and cut the ham into small cubes. Finely chop the green onion. Combine everything, season with salt and pepper, and mix well.

Step 3:
Heat a skillet. Spear a small piece of pork fat (or lard) on a fork and rub it over the pan to grease it. Regrease the pan this way before each crepe.

Step 4:
Pour in some batter, scatter the topping mixture over it, and press it down lightly with a spatula. Drizzle a little more batter over the top.

Step 5:
Cook the crepe until golden, then flip it very carefully. Press it down gently with the spatula again so the topping sets into the crepe and doesn't fall off.
