Baked Mushrooms in Sour Cream with Onions and Cheese

A tasty, satisfying dish that works for any occasion! Mushrooms in sour cream is an all-purpose recipe—any mushroom will do—and baking them under a layer of cheese turns them into something extra fragrant and delicious.

    The ingredients. The star here, of course, is the mushrooms—use whatever you have: button mushrooms, porcini, chanterelles, oyster mushrooms, fresh, frozen, or even soaked canned. I used frozen wild mushrooms left over from foraging season (pre-boiled in salted water).

    Finely chop the onion.

    Sauté it in vegetable oil until golden.

    Add the mushrooms to the onion and cook for 5–7 minutes.

    While the mushrooms cook, grate the cheese.

    Salt the mushrooms.
