Baked Mushrooms in Sour Cream with Onions and Cheese
A tasty, satisfying dish that works for any occasion! Mushrooms in sour cream is an all-purpose recipe—any mushroom will do—and baking them under a layer of cheese turns them into something extra fragrant and delicious.
Cooking method
-
Step 1:
The ingredients. The star here, of course, is the mushrooms—use whatever you have: button mushrooms, porcini, chanterelles, oyster mushrooms, fresh, frozen, or even soaked canned. I used frozen wild mushrooms left over from foraging season (pre-boiled in salted water).
-
Step 2:
Finely chop the onion.
-
Step 3:
Sauté it in vegetable oil until golden.
-
Step 4:
Add the mushrooms to the onion and cook for 5–7 minutes.
-
Step 5:
While the mushrooms cook, grate the cheese.
-
Step 6:
Salt the mushrooms.
-
Step 7:
Add pepper.
-
Step 8:
Add the flour and stir.
-
Step 9:
Stir in the sour cream.
-
Step 10:
Stir and let it warm through for 3–4 minutes.
-
Step 11:
Transfer the mushrooms in sour cream to a baking dish.
-
Step 12:
Sprinkle with grated cheese and bake at 400°F (200°C) for 10–15 minutes.
-
Step 13:
Our mushrooms are ready.
-
Step 14:
Just before serving, chop some fresh parsley or dill.
-
Step 15:
Scatter the fresh herbs over the dish and plate it up.
-
Step 16:
So tasty, hearty, and satisfying—even without meat!
-
Step 17:
Enjoy!
