- Let's make breaded pork cutlets—start with the pork. It's best to buy meat that isn't too fatty; trim off any fat you find. 2. Rinse the piece of pork and pat it dry with a paper towel. 3. Cut the meat into pieces that aren't too thin, about ¾ inch (1.5–2 cm), place on a cutting board, and pound them flat. 4. Season the cutlets with salt and pepper to taste. 5. While they rest, make the egg wash: whisk the egg with the warm water. Dip each piece of meat first in the egg wash, then in the breadcrumbs. 6. Fry the cutlets until they're partway cooked. 7.
