Pumpkin Kefir Pancakes

Bright, sunny little pancakes for your afternoon tea — delicious, wholesome, and easy! This recipe is a bit out of the ordinary, and so are the pancakes: vivid in color, fluffy, and so, so good.     1. Cut off a wedge of pumpkin, peel it, and scrape out the stringy fibers. Grate the pumpkin on a box grater.
    1. In a separate bowl, pour in the kefir, crack in the egg, add the sugar, and stir.
    1. Sift the flour and baking soda into the mixture and add a knife-tip of vanillin. Whisk until you have a smooth, lump-free batter. Keep in mind that you may need a little more or less flour depending on the brand.
    1. Now fold the grated pumpkin into the batter and mix well. The batter should be thick enough that it doesn't spread out the moment it hits the pan.
    1. Fry the pancakes in vegetable oil on both sides until golden brown.
