Bananza Pancakes
A familiar favorite with a hint of the exotic — a little kitchen improv. These pancakes come out fairly dense, but not rubbery, and they're wonderfully filling.

Cooking method

Step 1:
Mash the banana into a smooth purée.

Add the egg and mix thoroughly.

Gradually work in the flour. You may need a bit more — it all depends on the size of your banana.

Add the sugar. Feel free to skip this step if you'd rather.

Add the baking powder and mix well.

Stir in the oil.

Step 7:
Cook on a preheated skillet.

Step 8:
About 2 minutes per side.
- Along with the baking powder, you can stir a little vanilla or cinnamon into the batter. Serve hot.
