  • Shell the walnuts and run them through a meat grinder — you should end up with about 1 cup of ground nuts. Run the dried bread crumbs through the grinder as well. Pulse the onion in a blender, and separately pulse the raw potatoes. Combine all of these, press in the garlic, season with salt and pepper, and beat in the egg. Mix again. With wet hands, shape into cutlets and fry them in a heated, oiled skillet on both sides.
