- Sprinkle the pieces of pork cheek with pepper, salt, and ground cloves on all sides. Take a board and stretch a sheet of plastic wrap over it, then sprinkle the wrap with coriander. Press one side of the cheek into it, then the other. Place garlic and bay leaf on the wrap and the cheek on top of them. Put garlic and bay leaf on top of the cheek as well, then wrap it up. Put the pieces into a pot and add water. Set a weight on top and cook for two and a half hours. After that time, take out the cheek and set it under a weight until the fat has fully set. The dish is ready. Enjoy your meal!
