Cooking method
Sprinkle the cheek pieces with pepper, salt and ground cloves on all sides. We take a board and stretch the food film on it, which we sprinkle with coriander. We roll off one side of the cheek, and then the other. We put garlic and bay leaf on the film, and on top of the cheek. On top of the lard, we also put garlic with bay leaf and wrap it.
We send the pieces into a saucepan and pour water. We put a press on top and cook for two and a half hours. After this time, we take out the cheek, put it under the press until the fat completely solidifies.
