Salo Boiled in Brine

How about some boiled salo? A wonderfully tasty appetizer! Give it a try! A friend I hadn't seen in about five years — and then ran into out of the blue — recommended I try this recipe. It turned out simply delightful! It really is worth a try. It's so tasty!

  • Cut the salo into pieces. Rub it with salt and put each piece in a separate bag. Add bay leaf, garlic, and the mixed peppercorns to the bags on top. Tie the bags shut. Set a pot of water over the heat, bring it to a boil, and put the bags of salo in it. Cook for 80–90 minutes. Then take the salo out of the water and let it cool. Cut open the bag, take out the salo, scrape off the salt, and remove the pepper and bay leaf. Done. Slice the salo into pieces. Black bread and mustard go perfectly with it. Enjoy your meal!
