    1. Sort the rice, rinse it, and put it in a heavy-bottomed pot. 2. Cover the rice with cold water and add salt. 3. Bring the water to a boil, reduce the heat to its lowest setting, cover the pot with a lid, and cook the rice for about 10 minutes until all the liquid has evaporated. Don't open the lid often, so the steam doesn't escape. Don't stir the rice! Don't add more water, or the rice will turn gummy — it should cook essentially by steaming. Once all the liquid has evaporated, remove the pot from the heat and let it rest, covered, for 5–6 minutes.
