Cooking method
- Blend the pumpkin to a smooth purée. Add the sugar, eggs, salt, and milk; stir, then whisk. Add the flour along with a pinch of baking soda slaked with a little vinegar or lemon juice. Whisk again. Heat a skillet and grease it lightly. Cook the crêpes as usual, browning them on both sides. As they come off the heat, you can brush them with melted butter.
