  • Whisk the eggs with the milk and pour the mixture over the oats; let them soak for 20–30 minutes. Add the oat mixture to the ground meat, season, and knead the mixture thoroughly (tapping, patting, and tossing it against the bowl to firm it up). With wet hands, shape the patties, coat them in breadcrumbs, and fry on both sides until lightly golden. Then cover the pan and steam the patties over low heat (don't skip this!) — or add a little water or sour cream and let them braise — so the oats soften through completely.
