Three-Meat Cutlets Stuffed with Cheese and Garlic

A really delicious cutlet recipe that belongs on your menu! I found a couple of pieces of meat in the fridge today. My imagination didn't go beyond cutlets — but a chunk of cheese and some onion improve any recipe, so cheese-stuffed cutlets it is for dinner!

  • While the bread soaks in the milk, grate the cheese and grind the meat. I don't care for cutlets made from a single meat — I prefer a mix of veal and tender pork. In my opinion it makes just about perfect food, especially with home-ground meat. Don't forget to lightly squeeze out the bread, or the cutlets will fall apart. Now chop the onion very finely — I don't like biting into pieces of onion in a cutlet. Garlic is a matter of taste; usually I don't make cutlets without it, but today these cheese cutlets will get by with almost none — I'll add just one clove for aroma, and that's plenty. Mix the ground meat with the seasonings, onion, and one egg. Break the second egg into a shallow dish — that's for coating the cutlets before frying. Now start forming the cheese cutlets: flatten a portion of meat into a patty, spoon cheese and herbs into the center, and fold it closed for frying. And here's the last "cutlet secret": the tastiest cutlets come from dipping them first in egg, then in breadcrumbs, and back into the egg. The result is incredibly delicious, crispy cheese-stuffed cutlets, ready to serve. Enjoy!
