Pork-and-Beef Patties with Fatback and Rye Bread

Patties made from a blend of meats come out juicier, heartier, and more richly flavored! I love both cooking and eating patties. If you've read through the ingredients, you were probably surprised to see potato and cabbage in here. The potato helps the meat mixture hold together, and the cabbage makes it soft and airy. Let's start from the beginning.

  • I use pork and beef in equal parts and add a little fatback so the patties aren't too lean. I grind it all in a meat grinder, along with the onion, potato, parsley, garlic, and cabbage. If you prefer, you can grate the vegetables on a fine grater, but the way I described is much faster. Then I soak dark rye bread in milk or water and squeeze it out. Don't forget the egg, and season with salt and pepper. If you like, you can add a spoonful of mayonnaise. Mix everything well, or the patties will fall apart in the pan. Roll the mixture into balls and flatten them thin with your palm. Coat both sides with breadcrumbs and fry in sunflower oil. These patties aren't simmered afterward. If you're worried they're raw in the middle, just pop them in the microwave for a minute.
