Mashed Potato Pancakes

Pancakes are always a good idea—and potato pancakes are hearty and satisfying! This is probably the simplest recipe of its kind I've ever come across, and it comes from German home cooking. When you're craving something a little special and you're tired of the usual fried or mashed potatoes, these really hit the spot. The ingredients are simple, the kind most of us keep on hand, and they don't take long to fry up. They make a wonderful breakfast and can be served with sour cream, mayo, ketchup, or any sauce you like—even a garlicky one. This recipe serves 4 (and, by the way, they're best with a sour cream and garlic sauce).

  • Boil the potatoes and mash them. Season the mash however you like—you can stir in a little milk and butter—but be sure to add the 2 eggs. I keep it simple with just the eggs and a splash of the potato cooking water.
  • Separately, finely chop the onion and sauté it in a little vegetable oil, then fold it into the mashed potatoes. Season with salt.
  • Heat a little oil in a skillet over medium heat and fry the pancakes, shaping them with wet hands. You can coat them in breadcrumbs if you like. Fry until golden on both sides. Serve with sour cream.
