  • In Kyrgyzstan, mutton dishes are hugely popular, but this one is an exception — it's made with beef. If you want to impress your guests, make Susamyr steak. Start by rinsing the beef and slicing it across the grain into portion-sized pieces. Pound each piece thoroughly until it's as thin as a pancake. Next, cut the fat-tail lard into small pieces (if you can't find it, kidney fat works too), then season it with salt and black pepper — as the saying goes, "you can't spoil lard with pepper." Place a piece of lard on each pounded slice of beef and roll it up so the fat is tucked inside, forming a little round bundle. Dredge each bundle in flour on a dry, clean plate, then fry them in a skillet with hot ghee until the meat is cooked through. Fried potatoes make the best side for Susamyr steak. Give it a try — it's really delicious.
