  • So, let's get started. First, wash the spinach thoroughly, let the water drain, and set it aside to dry off a bit, then transfer it to a salad bowl. Next, make the dressing: mix the vinegar with the crushed garlic cloves and add allspice and nutmeg to taste. Separately, fry the bacon in a skillet until it's browned and crisp. Just before serving, drizzle the spinach with the dressing, add the bacon along with some of its rendered fat, and toss with a wooden spoon. Finish by scattering walnuts over the top (optional).
