Pork Zrazy Stuffed with Mushrooms, Baked in the Oven
Here's an unusual take on an everyday dish you're going to love! Zrazy can be made with all kinds of fillings, and today ours are stuffed with mushrooms. They come out fragrant, hearty, and downright irresistible — meat lovers won't be able to resist. Perfect for holidays or a regular weeknight.

Step 1:
Gather all the ingredients you'll need for this recipe.

Prep the meat. Slice the pork across the grain into large, medium-thick pieces. Pound them with a meat mallet and rub both sides with salt and pepper to taste.

Now for the filling. Peel and finely chop the onion. Peel the garlic and press it. Wash the mushrooms and cut them into medium dice.

Add the onion to a preheated skillet with vegetable oil and fry for a couple of minutes, then add the garlic and, a minute later, the mushrooms. Stir and sauté uncovered for 5 to 7 minutes so the moisture cooks off. Pour in the red wine and keep the mixture over low heat for another couple of minutes, stirring now and then.

Transfer the filling from the skillet to a bowl and let it cool — it's much easier to work with that way.

Turn the oven on to 480°F (250°C), and while it heats, shape the zrazy: spoon the mushroom filling into the center of each piece of meat.

Roll each one up into a log and secure the edges with wooden skewers (toothpicks work too). Use up all the meat and all the filling.

Grease a baking sheet with vegetable oil, arrange the zrazy on it, and sprinkle with a basil seasoning or whatever else you like. Put it in the oven to bake for 30 minutes.

Take the finished zrazy off the baking sheet, pull out the skewers (toothpicks), and serve. Now you know how to make these "Mirage" meat zrazy in the oven.
- Start to finish, the whole dish took 1 hour and 20 minutes — really not much at all. And the flavor is wonderful, like a mirage! These zrazy go with any side: mashed potatoes, buckwheat, rice, pasta, roasted or braised vegetables, and so on. Your favorite salad is a perfect match, too. Enjoy!
