Cooking method

  1. Step 1:

    Step 1

How do you braise pork in mayonnaise? Get everything you need ready. Choose boneless pork — shoulder (neck) or ham makes a great cut.

  2. Step 2:

    Step 2

Cut the pork into small serving-size pieces and pound them lightly with a meat mallet.

  3. Step 3:

    Step 3

Brush a skillet with vegetable oil and lay the meat in it. Coat every piece all over with mayonnaise. Sprinkle on a little salt and your spices. Go easy on the salt — mayonnaise is already salty.

  4. Step 4:

    Step 4

Peel and rinse the onion. Cut it into half-moons and spread it in an even layer over the meat. If you want to cook a bigger batch, just repeat the layers.

  5. Step 5:

    Step 5

Cover the skillet and set it over low heat. Braise the pork, covered, for 40–50 minutes. Go by how tender the meat is.

  6. Step 6:

    Step 6

The finished meat will shrink a bit, and the onion will nearly melt away. The fibers soak up the mayonnaise and turn soft and tender.

  7. Step 7:

    Step 7

The pork braised in mayonnaise is done! Plate it up and bring it to the table. Add any side you like — mashed potatoes are the perfect match. Enjoy!

  • Homemade mayonnaise is worth the effort — it tastes better and is better for you. You can also use sour cream or plain yogurt as the dressing instead of, or mixed with, the mayonnaise in any ratio you like; that'll cut the calories.
  • Every oil is only good up to a certain temperature — its smoke point, past which it starts to burn and form harmful compounds, including carcinogens. It pays to know which oil to reach for when frying and which to skip altogether.
  • One more thing: the wrong pan can ruin even the best recipe, so it's worth choosing the right skillet for the job.
