Chicken Braised in Sour Cream

    Peel the onion and cut it into medium dice.

    Stir the cornstarch into 50 ml (about 3 1/2 tablespoons) of cold water.

    Combine the sour cream, dill, salt, and pepper, and stir. If your sour cream is thick and rich, add 100 ml (about 1/2 cup) of water.

    Cut the chicken into serving pieces and fry them in the vegetable oil until golden brown.

    Put the onion and bay leaf into a heavy-bottomed pot and season with salt. Lay the chicken on top and pour the sour cream over it. Simmer over medium heat for about 20 minutes.

    Pour the dissolved cornstarch into the pot. Simmer for another 20–25 minutes, until the chicken is cooked through.

    Right at the end, stir in the pressed garlic.

  • You can skip browning the chicken — just add 7–10 minutes to the braising time.
  • The trick to keeping sour cream and heavy cream from curdling in a sauce is to dilute and temper them first, as done here.
  • Every oil is only good up to a certain temperature — its smoke point — beyond which it starts to burn and forms harmful compounds. Choose a high-smoke-point oil for frying.
  • If you use a premade spice blend, read the label first. These blends often already contain salt, so account for it or you risk over-salting the dish.
