Stewed Cabbage and Potatoes in a Slow Cooker

Fast, simple, throw-together, fragrant, and delicious! Cabbage and potatoes stewed in a slow cooker make a juicy side that goes with any meat or fish — or a meatless main all on its own. The slow cooker does all the heavy lifting: the cabbage won't scorch and comes out fully tender.

Cooking method

Cooking time: 32 min
  1. Step 1:

    Step 1

How do you make stewed cabbage and potatoes in a slow cooker? Start by prepping your ingredients. Rinse and peel the potatoes well. Pull the outer leaves off the head of cabbage and cut it in half. Peel the onion, cut it in half, and use one half. In place of tomato paste, you can use canned peeled tomatoes, tomato juice, ketchup, or sauce.

  2. Step 2:

    Step 2

Cut the onion half into half-moons or quarters. Add it to the slow cooker insert, into which you've poured a neutral vegetable oil. Choose the sauté or fry setting (depending on your model) and, if you can set a time, give it 7 minutes.

  3. Step 3:

    Step 3

Cut the peeled potatoes into medium cubes or sticks. Add them to the onion and sauté the vegetables together for the time you set, stirring every 1–2 minutes so they don't burn. If you like carrot in a dish like this, you can add some chopped carrot too.

  4. Step 4:

    Step 4

Meanwhile, cut the cabbage halves into medium ribbons or strips. Don't shred it too fine, or it'll turn to mush as it stews. To help it cook faster, put the cut cabbage in a deep bowl and squeeze it gently with your hands so it releases some juice.

  5. Step 5:

    Step 5

By the time the sauté cycle ends, the onion will have taken on a golden color. Switch the cooker to a stew setting for 25 minutes — that's plenty of time to cook the potatoes and stew the cabbage.

  6. Step 6:

    Step 6

Add the cut cabbage to the insert, spreading it out evenly.

  7. Step 7:

    Step 7

Sprinkle with salt and ground black pepper. Feel free to add other spices and seasonings — a little ground paprika or garlic makes it especially tasty.

  8. Step 8:

    Step 8

Add the tomato paste (or whatever you're using in its place). Stir in the sugar — it balances the acidity of the tomatoes. Pour in hot water or broth, if you have it. Cover and cook until the timer beeps. There's no need to stir the contents while it cooks.

  9. Step 9:

    Step 9

When it beeps, open the lid carefully and let the steam escape so you don't get burned. At this point you can stir in a little melted butter for richness and some chopped fresh herbs, if you're not adding them at the table.

  10. Step 10:

    Step 10

Spoon the stewed cabbage and potatoes onto plates with a slotted spoon and let them cool slightly before serving. Chop some fresh herbs (green onion, dill, or parsley) and scatter them over the dish just before serving. Enjoy!

  • Root vegetables are best scrubbed with a brush or a firm sponge under running water.
  • Keep in mind that the cooking time and setting given here are approximate. Every slow cooker works a little differently, and even identical models from the same brand can have their own quirks. Before you make a new dish in yours, read the manual, then start by cooking dishes you already know before moving on to new ones, dialing in the setting and time for your own machine.
  • For cooking, it's best to use filtered or bottled water with a neutral taste. Tap water can leave the dish with an off flavor.
