Slow-Cooker Beef Braised with Vegetables
A really tasty meat-and-vegetable dish for dinner. Beef cooked this way comes out unbelievably soft, juicy, and tender. The meat soaks up the vegetable juices and takes on a rich flavor. How do you make slow-cooker beef braised with vegetables? Cut the boneless beef into large pieces across the grain.

Now prep the vegetables. Wash the bell pepper, remove the seeds, cut it in half lengthwise, and slice each half into strips. Use any color pepper, or a mix. Wash the tomatoes and cut them into half-rings. Peel and chop the onion. Wash the carrot and cut it into medium cubes.

This recipe uses a 700-watt slow cooker. Set it to the "Bake" setting for 45 minutes, pour vegetable oil into the bowl, and wait 5 minutes for it to heat up. Add the meat, onion, and carrot all at once. Fry for the full time, stirring the meat and vegetables a few times along the way. Leave the lid open.

After 40 minutes, the beef will be nicely browned and the vegetables soft and well cooked down.

Next, add the tomatoes and peppers to the bowl. Add salt to taste and spices — I use a meat seasoning blend. Stir everything well. Switch to the "Stew" setting and set the time for 1 hour. Close the lid. Braise the meat and vegetables in their own juices — don't add water.

About 40–50 minutes into braising, you can check the meat for doneness and taste it for salt and spices. It may well be done by then. If you want the meat even more tender, wait for the final signal. Our dish is ready to serve!
