Cabbage Braised in Sour Cream

- Gather your ingredients. It's best to use young, juicy cabbage, but with a firm, springy head. Remove the outer leaves, which are usually dry and dirty. Finely shred the cabbage with a knife and cut out the core. If you're cooking for a large family, you can use a whole head at once — the cabbage shrinks a lot as it braises compared to when it's fresh. Put the shredded cabbage in a deep bowl, add a little salt, and scrunch it with clean hands. Set the bowl aside. Peel the onion and finely chop it with a knife — it adds a pleasant aroma and flavor. Pour the vegetable oil into a skillet and heat it. Add the onion and sauté until translucent. Add the prepared cabbage to the onion in the skillet. Fry them together over medium heat, stirring constantly, for about 5 minutes. Then add the sour cream — a thicker, higher-fat one, homemade if you have it, makes the dish tastier and juicier. Pour in the water or vegetable broth. Season with salt and ground black pepper to taste. Stir everything well. The sauce should come halfway up the contents of the pan. Cover and braise the cabbage over medium heat for about 10 minutes. Then take off the lid and stir again. You can add chopped fresh herbs and garlic if you like. Keep it on the heat for another minute, then turn it off. The dish is done. Serve the braised cabbage with sour cream hot, as a dish on its own with fresh bread, or as a side to patties or other dishes. Enjoy!
