Slow-Cooker Layered Eggplant with Tomatoes
A really tasty vegetable appetizer for eggplant lovers. I've been making this dish for a long time and decided to share the recipe with you. These eggplants are best served cold.

Step 1:
The ingredients you'll need. For this dish you can use up odds and ends of different cheeses from the freezer.

Step 2:
Slice the onion into half-rings.

Step 3:
Cut the eggplant into rounds about 1/4 inch (0.7 cm) thick.

Cut the tomatoes into thin rounds.

Step 5:
Pour the oil into the slow cooker bowl and spread some of the onion over the bottom. Then layer it up: eggplant (salt it and sprinkle with thyme), tomatoes (sprinkle with crushed garlic), cheese.

Step 6:
Make three layers, finishing with cheese. Close the lid and set the slow cooker to the "Bake" setting (one hour).

Step 7:
After the beep, open the lid and switch to the "Multi-Cook" setting at 210°F (100°C) for 20 minutes to cook off the remaining liquid. Transfer the eggplant to a serving dish and hide it away to cool, or everyone will devour it piping hot on the spot!

Garnish with fresh herbs to serve. Enjoy!
