Beef Liver Braised in the Slow Cooker

An elegant dish that's easy to make — and we're braising it in wine! Beef liver braised in the slow cooker is perfect for dinner, whether it's a family meal or a romantic one. For the latter, serve the wine-braised liver without a side, garnished with sprigs of fragrant rosemary. As a side, though, anything goes — grains (rice is a great choice), potatoes any way you like, pasta, or baked or boiled vegetables.

  • This dish isn't hard to make, and it starts with the prep: rinse the beef liver, blot off the excess moisture with paper towels, then cut it into medium pieces about 3/4 to 1 inch (2 to 2.5 cm) across; peel and finely chop the onion; rinse the mushrooms, dry them with a paper towel, and cut them in half (or into quarters if large); rinse a sprig of rosemary, pat it dry, and finely chop the fragrant leaves. Turn on the slow cooker, choose the "Sauté" setting, add the butter, and let it melt for a minute. Add the chopped onion to the pot and cook until soft, about 3 minutes, stirring as you go. Add the mushrooms and cook them for 3 minutes, stirring constantly. Now add the cut-up liver and cook for 5 minutes, stirring occasionally. Sprinkle in the flour, add the smoked paprika, stir, and cook everything together for another minute. Pour in the white wine and broth, add the tomato paste and chopped rosemary, cook for another 2 minutes, and bring the liquid to a boil. Once it boils, braise the liver for 3 more minutes. Then add salt and freshly ground black pepper, stir, and taste, adding more salt if needed. Turn off the cooker. Serve the liver hot as a dish on its own with fresh-baked bread and herbs, or round it out with any side you like. Enjoy!
