Stewed Cabbage with Raisins

This cabbage will surprise you with how refined it tastes! I eyed this recipe for a long time. At first the combination — cabbage, balsamic, raisins, honey — seems like it shouldn't work. But I finally gave it a try, and I've never looked back. It's the most delicious stewed cabbage I've ever had! Maybe that's because I've always loved sweet-and-salty pairings: cake with salted caramel, meat with a berry sauce or fruit. So this salty-sweet cabbage was right up my alley. Honestly, words don't do it justice — you just have to make it and taste for yourself.

    1. Cover the raisins with boiling water and let sit for 15 minutes.
    1. Finely shred the cabbage.
    1. Heat the vegetable oil in a skillet, add the cabbage, and fry over medium heat, stirring occasionally, for about 15 minutes, until golden.
    1. Add the raisins to the cabbage, pour in 100 ml (about 1/3 cup plus 1 tablespoon) of water, and simmer, stirring, until the liquid has completely evaporated.
    1. Stir the honey, soy sauce, balsamic vinegar, and ketchup into the cabbage. Simmer over low heat about 3 more minutes, then remove from the heat.
